Bet v 1 is the main allergen in birch pollen and one of the most studied pollen allergens worldwide. This model shows its flexible structure and internal hydrophobic cavity, which may influence how it interacts with the immune system. Bet v 1 is also known for causing cross-reactions with certain fruits and vegetables, making it important for understanding both seasonal and oral allergy syndrome.
